Eating chocolate triggers a response in the brain to release a chemical called dopamine, a feeling you experience when the body experiences pleasure.
So this Valentine’s Day, don’t wait for someone to spoil you… treat yo’self! But forget the store-bought, sugar laden, preservative packed variety and make it yourself. The combination of crisp cacao and creamy caramel will be gift though… trust me! So go on, what are you waiting for? As Justin Beiber would say, “you should go and love yourself”...
Chocolate Goji & Caramel Love Bites
Makes: 12
Prep time: 15 minutes plus 4 hours chill time
Filling:
1/2 cup almond butter
1/4 cup medjool dates
1/2 teaspoon pink salt
1 tablespoon coconut oil, melted
Place in food processor and blend until smooth. Place teaspoon fulls of mixture into heart shapped moulds
Chocolate Coating:
150grams 85% dark Lindt chocolate or homemade chocolate
Melt chocolate over double boiler and pour into heart moulds over caramel filling
Topping:
Goji crumble
1/4 cup almond meal
1/2 cup Goji berries
Method:
Place in coffee grinder or NutriBullet and blend until breadcrumb texture. Sprinkle over chocolates. Place in refrigerator 4 hours or until set.
