Prep time: 5 minutes
Cook time: 10 minutes
You will need:
1/4 leek, thinly sliced
3 spears asparagus
Handful of kale
Handful or parsley, finely chopped
1 tsp. nutritional yeast
Pink Himalayan salt
How to make it:
Heat olive oil in pan and sauté leeks over low heat. Add in asparagus spears, parsley and kale and cook for 3 minutes. Add in beaten eggs, nutritional yeast and seasoning. Cook for 3 minutes. Serve.
