It’s all about you & BAE… Bacon, Avocado and Egg, that is. This breakfast salad really feels hearty and wholesome with the addition of the bacon wrapped avocado. We love the colours and the vibrancy as well, because when has eating a rainbow ever led us astray?
Preparation time 5 minutes
YOU WILL NEED:
1 avocado, cut in half and seed removed
2 rashers bacon
1 egg, very fresh for best results Avocado and egg breakfast surprise
HOW TO MAKE IT:
Half fill a saucepan with water and bring to a simmer with 1/4 teaspoon salt. Crack egg into centre of water and poach for 3-4 minutes or until cooked.
Open avocado in half and place poached egg in centre. Close back together and wrap In bacon. You may need to secure with toothpick. Heat 2 teaspoons olive oil in pan and fry for 2-3 minutes on both sides. Cut in half and Place on bed of rocket and serve with lemon wedge.
