Super Bowl Snacks! Loaded Sweet Potato & Haloumi Fries
Level up your fry game with our Loaded Sweet Potato & Haloumi Fries! These babies add an extra taste twist to the classic loaded fries by mixing in crispy haloumi and a zingy salsa topping.
Result – ultimate yum!
- 1 kg sweet potatoes, cut into 1 cm wide chips
- 2 tablespoons coconut oil
- 300 grams haloumi, cut into batons
- 1 tablespoon olive oil
- 1 teaspoon paprika
- 1 teaspoon oregano
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1 red capsicum, roasted, peeled and diced
- 1 punnet heirloom tomatoes, diced
- 1 mild red chilli, finely diced
- 1/2 bunch coriander, chopped finely
- 1 red onion, very finely diced
- 2 tablespoons olive oil
- Salt and pepper
Preheat oven 180C. Line baking tray.
Coat sweet potato in coconut oil, paprika, oregano, salt and pepper.
Lay out on tray and bake 40 minutes. Tossing occasionally.
Heat olive oil in pan over medium heat and add haloumi. Pan fry until golden on each side.
Assemble salsa ingredients: roasted capsicum, heirloom tomatoes, chilli, coriander, red onion and mixed with olive oil and seasoned to taste.
Serve haloumi fries with sweet potato fries and salsa.
