Valentine’s Day is tomorrow, which means mountains of temptation lurking around every corner. And you know what, that’s okay. Especially when there are so many healthy alternatives out there to help you indulge, without technically indulging.
For the day of love this year, I wanted to do something a little different. I want to share my love with a sweet treat, and a cute personalised message to add that special factor. Gift these cakes to your husband, partner, best friend or the girl who sits next to you at work. Chances are, you will make their day brighter and help them nourish right at the same time.
This red kidney bean chocolate cake is super sneaky. It looks like a chocolate cake, smells like a chocolate cake…and it even tastes like a chocolate cake. But it is literally all goodness.
This recipe is made up of red kidney beans (yes kidney beans), cacao and honey. An unexpected ingredient list but the end result is healthy & delicious.
Stencil heart shapes onto baking paper and then fit to cake moulds (how cute are these). Cannot wait to get these in the oven.
Honey makes everything sweeter – naturally. Who needs white sugar when you can add in the gift of the bees?
Oh my goodness, how perfect do these look? Now I just need to find enough self control to wait for them to cool.
Now for the fun part…the icing. I wanted to do something a little different for the icing, and steer clear of anything unnatural. So, this is where experimenting comes into play. Silken tofu is the base ingredient for the icing and to achieve this beautiful, subtle pink colour, just add ½ tbsp. beetroot juice.
The end result!!! So, so cute and very MNB. I think it is so special to write personalised messages to your loved ones, and a cake seems to be the perfect way to say “I love you”.
