Can I let you in on a little secret? I eat cake for breakfast. Seriously, I do. I know it sounds overtly indulgent and OTT extravagant (who do I think I am, Marie Antoinette?) but in reality it’s actually far from it. This simple recipe is just as nutritious as it is delicious, and perhaps best of all, it’s super simple to make – no Parisian Patisserie experience required. It’s as easy as tossing a few ingredients in a mug, mixing & heating for just 2 minutes. Once I mastered the magic of mug cake muffins, I knew life would never be the same. Not only does this tasty treat cook in next to no time, but there’s hardly any clean up involved and no left overs to tempt you later! Raspberry and Banana Mug Muffin

In a bowl, mash the banana until it forms a paste.
Next, whisk in the egg. In your mug, add in all the dry ingredients and then add your wet. Combine well.
Cook for 2 minutes in the microwave. (alternatively, if you don’t like to use a microwave, you can bake your muffin in a ramekin in the oven for 30 minutes)
Enjoy straight out of the mug or turn upside down onto a plate and decorate with some extra banana.
