If there were one way to make Mother’s Day truly special, it would be to throw her a surprise Mother’s Day brunch. Think about it. A table beautifully decorated with her favourite flowers, a smorgasbord of nourishing delights and most importantly, some much needed bonding time together. We love a good brunch. Who wouldn’t when you can reap the benefits of breakfast and lunch recipes – the perfect arrangement in our eyes. So, if you are planning to cook up a storm for your beautiful mother this weekend, why not throw on an apron, and get in the kitchen to test out some of our LJ Active Chef’s guilt-free, sweet & savoury recipes. You won’t be disappointed.
1. Gregarious Muesli
Who doesn’t love muesli? We could literally eat it for breakfast, lunch and dinner. But since this is brunch, indulging in the delicious muesli is totally acceptable. This recipe is super easy to make and goes perfectly with some natural yoghurt or a dash of almond milk.
2. Passion and Citrus Iced Tea
3. Chocolate and Macadamia Shortbread
These would have to be one of the yummiest biscuits ever! Combining the goodness of macadamia nuts and cacao powder, this shortbread has the perfect amount of crunch, and will surely satisfy those chocolate cravings and sweet toothed mothers. Be warned, it is impossible to stop at one. These chocolate & macadamia shortbreads require a whole lot of self control.
4. Quinoa and Lemon Pancakes
Finally a pancake that we don’t have to feel guilty about eating! This nourishing recipe adapted from the holistic ingredient packs a serious protein punch, thanks to our friend quinoa, and has a beautiful fresh and lemony flavour. Pour over our berry coulis and a drizzle of honey/maple syrup to really set this dish off. Ok, who’s hungry? WE ARE!
5. Savoury Fantails
To balance out our sweet setting, these savoury fantails will go down quite nicely. These mini pull apart breads (made from scratch) will put the bakery kind to shame. Combining some truly beautiful flavours, including capsicum, paprika and our favourite herb – BASIL, this recipe will win the hearts of not just mum, but the whole family! If you need some extra guidance in creating this yummy recipe, Rhi our LJ Active Chef has posted a how-to demonstration here! Be prepared to feel like a true baker, as you roll your way to a truly scrumptious savoury dish.
