There are few things in life that bring us quite as much joy as chocolate, and did you know that if you play your cards (and recipe) right, chocolate can totally be part of a healthy diet? Don’t believe us? The proof is in the pudding muffins. You’ll eat your words (and probably the whole batch) when you see the recipe for these clean chocolate protein muffins courtesy of our fabulous friend The Fit Foodie. These babies are free from gluten, sugar, dairy, soy and refined sugar and are still 100% full on taste. At the perfect little size, a clean chocolate protein muffin is an ideal go-to whether you need a little somethin’ somethin’ post workout, after dinner or to cure your 3:30itis.
clean CHOCOLATE PROTEIN MUFFINS
SERVES: 24 mini muffins
INGREDIENTS:
- 2 free-range eggs
- 2 tbsp of raw cacao powder
- 3 scoops of chocolate protein powder
- ½ tsp gluten-free baking soda
- 1 cup almond meal
- 1/3 cup of stevia (I use Natvia)
- ¼ cup water
- ¼ tsp of Himalayan sea salt
METHOD:
- Preheat oven to 175º.
- Combine dry ingredients in a bowl.
- Make a well in the centre then add the eggs and water.
- Stir from the centre until combined.
- Divide into mini muffin cases (I prefer silicone to prevent sticking)
- Bake for 18-25 minutes until an inserted skewer removed cleanly.
- Allow to cool before dusting with additional cacao.
