Are you constantly striving to eat more greens? There really is nothing more nourishing and cleansing than a plate full of veggies. We round up some of our superfood favourites for this nourishing masterpiece – don’t be green with envy, just try it for yourself!
WHAT YOU’LL NEED:
For the bowl:
1 spiralized or shredded zucchini
4 asparagus sticks
1/4 cup edamame
2 boiled eggs (rolled in parsley)
Pepitas (pumpkin seeds)
For the macadamia, kale and lemon dressing:
Makes 2/3 cup
3 Tuscan kale leaves (stems removed)
1/3 cup macadamias
1/3 cup olive oil
Juice of lemon
1/4 teaspoon pink salt
1/4 teaspoon pepper
1 teaspoon rice syrup
Place in blender and blend until smooth. Add 2-4 tablespoons of water to get smooth consistency.
Arrange all greens on a plate and drizzle a generous amount of the green kale dressing on top for a deliciously tasty and super healthy lunch or dinner!
