The Salmon Stacked Sandwich
You will need:
1 thick cut rye sourdough
1/2 avocado
1/2 cup rocket
150 grams smoked salmon
1 boiled egg
Smash avo, layer onto the sourdough & stack away with all other ingredients!
The All Veggie Macro Box
You will need:
1 boiled egg
Roasted sweet potato
1/2 cup black rice
Green beans
Beetroot yoghurt dip
1/2 lemon
Ribbons of fresh shredded carrot
Assemble neatly in a box or bowl for an aesthetically pleasing lunch!
Turkey Cranberry Smashed Avo Sourdough Sandwich
You will need:
Wholegrain sourdough
Red sauerkraut
Grilled turkey breast
Mixed lettuce
Smashed avocado
Layer on your filling and enjoy!
Roast Vegetable Frittata
Leftover roast veggies from last night? PERFECT! Try this.
Preheat oven to 180 degrees.
YOU WILL NEED:
Roast veggies – literally anything (we used sweet potato & zucchini)
Eggs (6-10 depending on amount of vegetables)
Pinch of salt
Pepper
Fresh basil
Half an avocado
Place roast vegetables evenly in a shallow baking dish. Whisk together eggs with salt and crack of pepper. Pour over vegetables in baking dish. Scatter fresh basil across the top. Place in oven for 15-25 minutes, or until eggs are firm and top is golden.
Sweet Strawberry & Kale Chicken Salad
You will need:
Poached chicken (cold)
Kale
Strawberries
Mint
Lime & juice
Pomegranate
Salt & pepper
Shred chicken breast. Finely chop kale, strawberries & mint. Toss chicken through salad mixture and garnish with pomegranate seeds & a big squeeze of lime!
