Who doesn’t love Rocky Road? But what we don’t love is all the refined sugar that lurks beneath its delicious surface. But fear not, because we dreamed and schemed up a way you can have your Rocky Road, and eat it too! Say hello to our easy DIY Rocky Road, that will be a sure-fire crowd favourite, wherever (and IF ever) you choose to share it. Nourishing your body isn’t about deprivation, it’s just about creative adaptation and we’ve replaced the marshmellow, jelly and milk chocolate with dried cranberries, cacao and coconut oil to seriously up its nutrient quota.
DIY ROCKY ROAD
SERVES: 6
PREP TIME: 5 MINUTES
SETTING TIME: 1 HOUR
INGREDIENTS:
½ cup macadamias
½ cup walnuts
¼ cup pistachios
½ cup shaved coconut
2 tablespoon dried cranberries
2 tablespoon goji berries
pinch salt
¾ cup coconut oil, melted
½ cup cacao OR 1 cup chopped chocolate *If you are using chocolate, see substitution instructions below!
Line 1 baking tray or brownie tray and set aside. In a large bowl combine the coconut oil and cacao and mix until smooth. Add the remaining ingredients and mix to combine. Pour this onto your lined tray and garnish if desired with leftover ingredients. Place in the freezer to set. Once set, remove from freezer and cut into desired sizes. Keep cool before eating. This can be kept in your fridge for 1 week.
If you are using leftover chocolate, omit cacao and coconut oil. Place chocolate in a heatproof bowl and place over a simmering pot of water. Let rest over the bowl until the chocolate is melted and smooth to stir. Combine with remaining ingredients.
GARNISH: We used rose petals, chopped pistachio and coconut.
