THE DECONSTRUCTED SUSHI BOWL
Containing antioxidant-rich black rice, nutrient-loaded sweet potato (yes, our pantry regular is a superfood!), and iron-dense seaweed, this rich, flavoursome salad ticks all the boxes and packs a seriously tasty punch. Not only that, but this salad is a great meal that helps to support a strong immune system and gives you a boost energy to keep you going well past lunch time.
Want to MAKE YOUR OWN?
Here’s what you’ll need:
½ cup black rice
1 small sweet potato (cut into cubes)
1tbs coconut oil
1 medium carrot, grated
¼ red cabbage, finely sliced
Pinch pickled ginger
Shredded nori (seaweed)
½ red onion, finely sliced
Small handful coriander leaves, roughly chopped
Small handful mint, roughly chopped
1 tbs water
1 tbs mixed sesame seeds (white & black)
- Pre-heat your oven to 180 degrees. Coat the sweet potato in coconut oil, and place in oven until cooked.
- Add the rice and 1 cup of water in pot and bring to the boil. Let it boil for 5 minutes, and turn down to simmer until it is cooked. Drain and put aside.
- To make the dressing, assemble all ingredients and lightly mix. Pour 2tbs of the dressing over the cooked sweet potato in a bowl and keep the rest aside for later.
- Assemble your salad in a bowl and serve with the rest of your dressing!
