Deconstructed Sushi Bowl

When it comes to nourishing we’re always searching for new and exciting ways to challenge the status quo and reinvent the wheel. So, naturally, when we found out that Nourish By Lorna Jane was hitting ‘refresh’ on their deliciously nutritious menu, we couldn’t wait to see what was to come!

Containing antioxidant-rich black rice, nutrient-loaded sweet potato (yes, our pantry regular is a superfood!), and iron-dense seaweed, this rich, flavoursome salad ticks all the boxes and packs a seriously tasty punch. Not only that, but this salad is a great meal that helps to support a strong immune system and gives you a boost energy to keep you going well past lunch time.



Here’s what you’ll need:

½ cup black rice

1 small sweet potato (cut into cubes)

1tbs coconut oil

1 medium carrot, grated

¼ red cabbage, finely sliced

Pinch pickled ginger

Shredded nori (seaweed)

½ red onion, finely sliced

Small handful coriander leaves, roughly chopped

Small handful mint, roughly chopped

4tbs tamari

1 tbs water

1tbs honey

1 tbs mixed sesame seeds (white & black)



Here’s how:

  1. Pre-heat your oven to 180 degrees. Coat the sweet potato in coconut oil, and place in oven until cooked.
  2. Add the rice and 1 cup of water in pot and bring to the boil. Let it boil for 5 minutes, and turn down to simmer until it is cooked. Drain and put aside.
  3. To make the dressing, assemble all ingredients and lightly mix. Pour 2tbs of the dressing over the cooked sweet potato in a bowl and keep the rest aside for later.
  4. Assemble your salad in a bowl and serve with the rest of your dressing!
