Before you make a break for the vending machine or dip your spoon in a jar full of nutella (we know you’ve all done it before), why not get a piece of Active Living advocate, Ange Simson’s super delicious cacao digestive bites. They’re seriously finger-licking good!

Cacao Digestive Bites are my go-to snack for several reasons. They’re full of goodness, nourishing and possibly the most delicious afternoon treat I’ve ever tasted. Ever. They can be made raw or thrown in the oven for that toasted coconut crunch. To top off their amazingness – they’re satisfying. You can eat one and stop. I always feel when you can just keep munching through a whole batch of something, it’s not fulfilling your nutritional needs. These give you the energy hit, nutrient burst and taste explosion you want from an afternoon pick me up.

Cacao Digestive Bites
Treat Yourself: Cacao Digestive Bites To Curb That Sweet Craving!
Preparation Time:
15 minutes
Total Time: 40 minutes
Servings: Serves 8-10
- Base: 2 cups walnuts
- 2 cups shredded coconut
- 1/4 cup coconut oil
- 1/2 cup rice malt syrup or honey
- Topping: 1/4 cup coconut oil
- 1/4 cup coconut milk
- 1/2 cup rice malt syrup or honey
- 1/2 cup raw cacao powder
- shredded coconut to top
- If baking - preheat oven to 180ºC.
- Place walnuts and coconut in a food processor and blend to a crumb.
- Stir in coconut oil and sweetener, then press into a lined square baking tin.
- Place in oven for 20 minutes, keep an eye on it to make sure it doesn’t burn. Then let cool.
- For my raw buddies - place in freezer while you make the delicious topping.
- For the topping, place a small pot over a low heat. Combine coconut oil, milk and sweetener in the pot and whisk.
- Once combined, add raw cacao powder and whisk until the mixture thickens slightly and is lump free.
- Pour warm topping over bars and sprinkle with shredded coconut.
- Place in fridge to set for a few hours then slice into bars.
