Balsamic Vegetables
The perfect side or base for your lunch or dinner, our balsamic vegetables are flavoursome and are the perfect accompaniment to many mains. Serve up alongside your favourite protein or to bulk up a salad and add to any family style meal or buffet!
Ingredients
- 1 red capsicum
- 1 baby eggplant
- 1 zucchini
- 1 wedge pumpkin
- ½ red onion
- 1 teaspoon Italian herbs
- 1 tablespoon olive oil
- Salt and pepper
- 1 tbs maple syrup
- 1 tbs balsamic vinegar
Method
- Preheat oven to 180C and line a baking tray.
- Cut vegetables and toss in herbs, seasoning and 1 tablespoon olive oil.
- Bake for 25 minutes or until cooked.
- Drizzle baked vegetables in 1 teaspoon balsamic vinegar and maple syrup.
- Bake for 5 more minutes.
- Serve and enjoy
