4th of July Healthy Hot Dogs

feature

When it comes to celebrating the 4th of July, what could be more patriotic than tucking into a Hot Dog? A healthy one of course! Frankly, we couldn’t agree more, which is why we we’ve whipped up two recipes for healthy hot dogs that will tickle the taste buds of all of your 4th of July guests… even your gluten-free and vegan friends, but won’t leave you feeling guilty.

Gluten-Free Hot Dog w/ Grilled Chicken & Apple Slaw

CHICKEN-DOG-3

Makes: 2

2 gluten free hot dog rolls

200 grams chicken, cut 2cm thick strips

2 tablespoons smoked paprika

½ teaspoon salt

½ teaspoon pepper

40 grams spinach

2 lemon wedges

1 tablespoon coconut oil

Apple slaw:

5 sprigs mint, finely sliced

5 sprigs parsley, finely sliced

1 green apple, finely sliced

½ cucumber, finely sliced

1 avocado

1 tablespoon Apple cider vinegar

½ teaspoon salt

½ teaspoon pepper

Heat up the coconut oil in a fry pan. Toss the chicken in the smoked paprika and place in the hot pan. Cook chicken, turning over often until cooked. Set aside to slightly cool. To make your slaw, mash up the avocado until it is mostly smooth. Add in the apple, cucumber, herbs and seasoning and mix until combined. Fill your buns with the spinach, and then chicken. Spoon in the slaw on top, squeeze over the lemon and eat immediately.

Vegan Cabbage Dog with Lentil Balls

VEGAN-DOG-1

Makes 2:

4 leaves red cabbage, thoroughly washed

1 tomato, diced

½ onion, diced

½ cucumber, cut into slivers

2 tablespoons sauerkraut

Sprouts, to garnish

Lentil balls:

1 tin cooked lentils, washed and drained

100g sweet potato, grated

3 tablespoons oats

1 tablespoon smoked paprika

2 tablespoons nutritional yeast

½ teaspoon salt

½ teaspoon pepper

Preheat your oven to 180C. Add all of your lentil ball ingredients to a blender and lightly blend until paste forms. Take 1 tablespoon sized balls of lentil mixture and place on lined baking tray. Once all mixture is balled, place in oven and cook for 15 minutes until outside is toasted. For your hot dog filling, mix the tomato, onion, pepitas, and pumpkin seeds in a bowl and set aside. To build your cabbage dog, place in the lentil balls, then the cucumber slivers. Finish with a spoonful of the tomato mixture and sprouts and eat immediately.
