15-Minute Turmeric and Honey Granola

 

What better way to start the day than with a nourishing bowl of good old granola? Whether it’s sprinkled on a smoothie, mixed with fruit and yoghurt or eaten straight from the jar (guilty), whatever the question, granola is the answer… especially when it only takes 15-minutes to make from scratch! Try whipping up a fresh batch on Sunday to give you a weeks worth of quick and delicious weekday breakfasts, that you’ll thank yourself for when you can snooze for an extra 10-minutes on Monday! 

 

15-MINUTE TURMERIC AND HONEY GRANOLA

 

MAKES 2 CUPS

 

PREP TIME: 5 MINUTES

 

COOKING TIME: 10 MINUTES

 

INGREDIENTS:

 

½ cup hazelnuts, chopped

½ cup cashew nuts, chopped

½ cup brazil nuts, chopped

½ cup pepitas

3 tablespoons teff

1 cup puffed spelt (or any puffed alternative, puffed buckwheat works well too!)

1 tablespoons turmeric

1 tablespoon cinnamon

1 teaspoon ground ginger

¼ cup honey

2 tablespoons coconut oil, melted

 

Preheat the oven to 180C, and line 1 baking tray. In a large bowl, whisk together the honey and coconut oil until it is thoroughly combined. Sprinkle in the ginger, cinnamon and turmeric and mixture and combine. Add in the remaining ingredients and mix together to ensure everything is evenly coated. Pour the mixture onto a tray ensuring it is evenly spread out. Bake for 10 minutes or until the mixture is lightly toasted. Remove from oven to cool. Remove from tray once completely cool and store in an airtight container. 

 

Serving suggestion: Enjoy with fresh yoghurt and fruit, or your favourite milk.
