COOKING TIME: 10 MINUTES
½ cup hazelnuts, chopped
½ cup cashew nuts, chopped
½ cup brazil nuts, chopped
½ cup pepitas
3 tablespoons teff
1 cup puffed spelt (or any puffed alternative, puffed buckwheat works well too!)

1 tablespoon cinnamon
1 teaspoon ground ginger
¼ cup honey
2 tablespoons coconut oil, melted
Preheat the oven to 180C, and line 1 baking tray. In a large bowl, whisk together the honey and coconut oil until it is thoroughly combined. Pour the mixture onto a tray ensuring it is evenly spread out. Bake for 10 minutes or until the mixture is lightly toasted. Remove from oven to cool. Remove from tray once completely cool and store in an airtight container.
