10 Minute Hot Smoked Salmon & Greens Bowl
Salmon Salad
- 2 fillets hot smoked salmon
- 1 Lebanese cucumber, sliced
- 1 yellow capsicum, sliced
- 1/2 punnet cherry tomatoes, halved
- 2 tablespoons hemp seeds
- 1 tablespoon olive oil
- Pinch salt
- 1/2 bunch kale
- 1 cup spinach
- 1/8 bunch parsley, finely chopped
- Hemp seeds to top
Creamy Macadamia Dressing
- 1/2 cup macadamias
- 1 clove garlic, grated
- 1 tablespoon nutritional yeast
- Juice 1/2 lemon
- 1 tablespoon olive oil
- 1/4 cup water
- 1/4 teaspoon salt
Method
- Assemble salad ingredients in 2 bowls.
- Flake the smoked salmon and add to bowls.
- Blend dressing ingredients until smooth and creamy.
- Drizzle dressing over salad.
- Top with hemp seeds.
- Serve.
