Our Farmer’s Salad works as a great meal prep recipe and can be enjoyed as a side or main. A handful ingredients, a little bit of chopping, mix it up and you’re done!
Add your go-to protein source to make it a larger meal or keep it on the lighter side. Drizzle your favourite dressing or keep it simple with an infused oil and salt and pepper to taste. Yum, yum, yum!
- ½ zucchini, roasted
- ½ capsicum – sliced or diced
- ½ tomato – diced
- ½ cup cooked quinoa
- 1 small handful red cabbage, shredded
- ½ avocado
- Palm sized serve protein cooked to taste (we love salmon, chicken, tempeh or tofu)
- Place all ingredients in bowl and drizzle in your favourite homemade dressing.
Done and done!
We recommend making a large salad and portioning out so you have a number of meals ready to go!
