All of the Flavour, Half of the Washing Up – Super Easy 1 Tray Crunchy Salad

Featuring for the first time in this week’s Nourish Plan on the Active Living Program, get ready to spend more time nom-ing and less time scrubbing.



One Tray Crunchy Salad

Serves 2.

Preparation time: 10 minutes.

Cooking time: 35 minutes.



  • 1 medium sized butternut pumpkin, thickly sliced
  • 1 cup tinned chickpeas, drained
  • 1 cup mixed sprouts
  • ½ cup brown lentils, cooked (or tinned)
  • ½ bunch flat leaf parsley
  • small handful fresh oregano
  • 2 tablespoon olive oil
  • 1 tablespoon smoked paprika
  • ½ teaspoon cinnamon
  • ½ lemon, finely sliced
  • 1 teaspoon Himalayan pink salt



  • 1 tablespoon (heaped) yoghurt
  • 1 teaspoon tahini
  • ½ lemon, juice
  • ½ teaspoon smoked paprika
  • 1 teaspoon Himalayan pink salt




  1. Pre-heat the oven to 180C.
  2. On a lined baking tray, coat and toss the pumpkin in the olive oil, salt, cinnamon and smoked paprika and place in the oven.
  3. Cook for 30 minutes, or until pumpkin is cooked.
  4. In the meantime, combine all ingredients for the dressing and set aside.
  5. Once the pumpkin is cooked, remove from the oven.
  6. Layer on all remaining salad ingredients.
  7. Finish with the dressing and serve!
