Fresh Fruity Granitas

We have a little culinary confession to make… We have a total tropical crush this season (well, three in fact) and we just can’t keep it a secret any longer! Say hello to one of our favourite recipes of sweet 16′ – two ingredient icy granitas! They’re fun, they’re fresh and they are one of the easiest (not to mention one of the most satisfying) snacks to whip together. All you have to do is blend, bag, freeze and then simply scoop into your favourite cups and serve it up. Summer snacking never tasted so darn good. If you’re having a aussie day soirée, why not make them for your guests, and if you fancy a cheeky weekend cocktail, just add a shot of your favourite liquor. 

Watermelon coconut

You will need:
2 cups freshly diced watermelon
1 cup coconut water

Pineapple passionfruit

You will need:
2 cups pineapple
1 passion fruit

Honeymelon lime

You will need:
2 cups honeydew
Juice of one lime
Optional: (1/2 cup coconut water)
Let’s make it:
  1. For each recipe place ingredients in a blender and blend until smooth.
  2. Pour the mixture into large plastic zip-lock bags (squeeze out any air) and lay flat on an oven tray. Place into the freezer. This will ensure the mixture freezes quickly (about 3-4 hours).
  3. Remove from freezer and using a heavy utensil (like a wooden or rolling pin) crush the mixture in the bag. Spoon into a small glass or jar.
