Speedy Creamy Raw Pasta

A creamy, delicious and nutritious dinner in 10 minutes? Yes please!!  Proving that a speedy meal can also be healthy one, this Creamy Raw Pasta can be whipped up (or ‘zoodled up’) with just a handful of ingredients and 10 short minutes.

Quick and simple with the added bonus of being gluten free, vegan / vegetarian friendly and dairy free!

 

Speedy Creamy Raw Pasta

SERVES 2

PREP TIME: 10 MINUTES

 

INGREDIENTS:

  • 2 Medium sized zucchinis

Sauce:

  • 1 ripe avocado
  • 1 tablespoon chives, roughly chopped
  • 6 basil leaves
  • 1 tablespoon nutritional yeast
  • 1 tablespoon pistachio
  • 1 tablespoon pine nuts
  • 3 tablespoon olive oil
  • 3 tablespoons water
  • pinch salt & pepper

 

Thoroughly wash the zucchinis, and put them through a zoodler (to make your noodles), put these aside. Add all sauce ingredients into a blender, and blend until smooth. You want this to be a thick cream consistency. Taste the sauce and season accordingly. Add the sauce to the zoodles and mix together until everything is evenly coated. Enjoy!

 

Serving suggestion: Enjoy on its own, or with a fresh green side salad.

 

Kitchen tips: If you would like this as a warm version, quickly blanch your noodles to heat them through, before adding the sauce.
