The holidays are not far away and with Thanksgiving and Christmas on the horizon, it’s time to start preparing! And, even though there is a lot that may not go to plan over the holidays, there is one thing we can be sure of… there will be leftovers! YUM!!
Is it just me, or is looking forward to leftovers a part of the holiday excitement and tradition? Well, if it isn’t… this deliciously simple and satisfying recipe from The Fit Foodie will change all of that :)
Leftover Turkey & Stuffing Salad
Unless you are feeding a host of people, a whole roast turkey can be pretty difficult to eat in one sitting. Enter this salad which is perfect for using up the leftovers and is super healthy too.
- 2 butter lettuce
- 5 cups leftover turkey
- ¾ cup leftover stuffing
- 1/3 cup pomegranate seeds
- 5 radishes, sliced
- 4 sprigs tarragon
- 8 sprigs chervil
- Black pepper
- Sea salt flakes
- Extra virgin olive oil
- Separate the lettuce leaves, wash and pat dry.
- Lay the leaves on a platter, and tear over the leftover turkey, then top with leftover stuffing, herbs, radish, oil and season to taste.
