Paleo Unicorn Bounty Bar



All hail unicorn food, the latest trend that’s sweeping across social media like wildfire, leaving a magical trail of tasty treats in its wake. While the pretty pinks and sweet sprinkles we drool over on instagram might look enchantingly enticing, don’t be fooled by the sugar and artificial colouring and flavoring that lurk in some of these magical morsels. So imagine our excitement when we discovered these Paleo Unicorn Bounty Bars from the whimsical women at Wildblend, that get their pastel colour from naturally nourishing sources including turmeric, pitaya powder and butterfly pea powder! 


These nourishing sweet treats are totally guilt-free and as an added bonus, they will help generate some serious double tapping action… 


Paleo Unicorn Bounty Bars 




For the unicorn bars:


  • 1 cup coconut cream
  • 3 Tbsp rice malt syrup/maple syrup 
  • 4 Tbsp coconut butter
  • 2 cups desiccated coconut
  • 1 Tbsp Just Blends pink pitaya powder
  • 1 Tbsp Just Blends butterfly pea powder
  • ½ tsp turmeric powder


For the chocolate coating

  • ½ cup melted coconut oil
  • 3/4 cup raw cacao powder
  • 1/4 cup maple syrup 




  • For the bars, combine coconut cream, coconut butter, and rice malt syrup in a large mixing bowl. Mix well until everything is combined
  • Once combined, fold in desiccated coconut
  • Divide mixture between 3 bowls
  • Add superfood powders to each bowl to create different colours (pink, blue, yellow)
  • Mix well to combine coconut mixture and superfood powders
  • Next, combine the three different colours by carefully folding them together. Make sure the layer the colours to create the unicorn effect
  • Once combined, press mixture down into a square baking tin lined with parchment paper. Freeze for 2-3 hours
  • For the chocolate coating, whisk the ingredients together in a bowl until smooth
  • Once set, into bars and individually coat each bar with the melted chocolate
  • Place in the fridge for 30 minutes to allow the chocolate to set
