The New Tofu Salad

 

Who loves a meal that is protein packed, delicious, full of fresh ingredients and ready in literally 5 minutes?? Yep, EVERYONE!

 

Suitable for a speedy lunch, substantial side or healthy dinner, with the added bonus of looking beautiful on your Instagram (we can help you with that too, right here), this tofu salad ticks all the boxes.

 

 

Word  to the wise, consider making up a double batch because you will want leftovers to enjoy tomorrow wink

 

 

The New Tofu Salad

 

SERVES 2

PREP TIME: 5 MINUTES

 

INGREDIENTS:

100 grams firm tofu, diced

1 small cos lettuce, washed and shredded

1 small carrot, zoodled

½ small cucumber, sliced

6 cherry tomatoes

1 avocado, sliced

2 tablespoons kimchi

1 tablespoon coconut oil

 

SAUCE:

3 tablespoons tamari

1 tablespoon honey*

1 tsp black sesame seeds

6 mint leaves, finely sliced

1 chilli, finely sliced

 

Add all ingredients of marinade together and add in the tofu, and mix together until tofu is coated. In a frypan, heat coconut oil, and add the tofu to brown on all sides, or for 3 minutes, turning frequently. Once the tofu has browned, add it back into the marinade and mix together.

 

Arrange all ingredients in a bowl, and dress with the remaining marinade! Enjoy!

 

Tip: *Replace with maple syrup or agave nectar to make this dish vegan friendly
