Jolly Chia Pudding

Hands up those of you who are partial to a clean and simple chia pudding? We’re not ashamed to admit our obsession appreciation, and whether it’s a breakky on-the-go, an afternoon snack or a sweet treat after dinner, we can’t get enough of our favourite super food – so you can imagine our excitement when we heard one of our favourite Fit Foodies The Pretend Health Freak had whipped up a recipe for a seriously #nextlevel Christmas themed chia pudding! You may remember this clever lady back when we featured her Coconut Ice recipe (which is also delish FYI) and she’s back at it again with her brand new Christmas Treats for Pretend Health Freaks E-Book… Knowing full well that we LOVE everything about Christmas (especially the food) she was sweet enough to share a recipe from inside, which we think is the perfect breakfast to wake up to on Christmas morning.

Let’s make it

Ingredients

Red Layer

  • 2 Tbsp chia seeds
  • 1/2 C almond milk
  • 1 tbsp pure maple syrup
  • 10 frozen raspberries (plus more for topping)
  • sprinkle of beetroot powder (optional)

Green Layer

  • 2 Tbsp chia seeds
  • 1/2 C almond milk
  • 1 tbsp pure maple syrup
  • 1/2 tsp spirulina powder

Method

Stir together the red layer ingredients in one jar and the green layer ingredients in another jar. Leave for about 15 minutes or more. Once thick, pour half of the red layer mixture into a spare nut butter jar. Then half of the green layer. And repeat. Top with raspberries and syrup.
