Our fit friend Christine Bullock is not only a workout queen, but secretly a bit of a healthy master chef too (honestly, what can’t this girl do). Whether your diet is gluten free, sugar free, dairy free or all of the above, there’s no stopping Christine from serving up a delicious dish, packed with nourishing goodness. On the menu today is an amazing gluten, dairy and sugar-free dessert bars recipe and we can’t wait to give this sweet treat a try.
Yield: 12 squares
Prep Time: 15 minutes
Cook Time: 20-25 minutes
- 10 organic medjool dates pited
- 1/2 cup almond butter
- 2 T coconut oil or butter
- 2 tsp vanilla extract
- 1/4 cup milk replacement (coconut, almond, rice)
- 2 eggs or flax egg replacement (1 tsp. flax to 3 tsp. water x2)
- 1 3/4 cups almond flour
- 1 tsp baking powder
- 1/2 cup dairy-free chocolate chips or carob chips
Preheat oven to 350°.
Cut a sheet of parchment paper and place it into an 8×8 baking dish. Spread dough evenly inside the dish. The dough will be a bit sticky so smooth and pat down with a spatula. Bake for 20-25 minutes. Let it cool completely before removing, and then cut into squares.
