Gluten-Free Cacao and Banana Brownies

Today could just be one of our favourite days on the entire calendar… World Chocolate Day. Yep, we’re officially calling it! So in celebration of day that’s devoted to one of our favourite foods (because Active Living is all about moderation), we’ve whipped up these amazing Gluten-Free Cacao and Banana Brownies, that are made from delicious AND nutritious ingredients, so you can indulge sans guilt (that means we can have two, right?).

Gluten-Free Cacao and Banana Brownies

COOKING TIME: 25-minutes

1 large ripe bananas

¼ cup honey or maple syrup (any sweetener will do)

1/3 cup peanut paste

1/3 cup cacao

½ cup almond meal

½ cup buckwheat flour

8 medjool dates

¼ cup coconut oil

2 eggs

Pinch salt

3 tablespoons cacao

2 tablespoon coconut oil, melted

1 tablespoon honey

Preheat oven to 180C. In a blender, combine all of the brownie ingredients until just combined, but the banana is still lumpy. Pour mixture into a lined brownie tin and place in the oven for 25 minutes, or until the brownie is cooked to your liking. Remove from the oven and set aside to cool. For the chocolate drizzle, combine all ingredients together and set aside ready to serve. Once the brownie is slightly cooled, cut into desired sized squares and serve with the cacao drizzle.
