This week we want to introduce you to some real flavour. You may not have heard of him (yet) but Ronaldo Fulieri is soon to take the health world by storm. This happy Brazilian is not only a healthy chef, he’s a nutritionist, personal trainer, writer and naturopath in the making. If that wasn’t enough, Ronaldo also hosts superfood cooking demonstrations as a hands on approach to teach and motivate others to prepare easy and healthy dishes. Keep an eye out for his quinoa super salsa below!
MNB: Hi there, welcome to our humble MNB! Tell us a little bit about yourself. What’s your story?
Thank you for having me team MNB! I came from Brazil to Australia in 2006 to learn English and travel around the beautiful country. I had planned to stay only 12 months and before i knew it, I ended up here permanently! Now, after 8 years in Australia, I’m a nutritionist, chef, personal trainer, writer and future naturopath! My passion is to pass on my knowledge to people to help improve their health. Teaching and healing comes natural to me. I started to become passionate about active living when I was around 12 years old. I was overweight and doctors told me that I was borderline obese. I was not healthy. I desperately wanted to change and do something about it, so I learnt how to cook for myself and went to the local gym to be able to exercise with weights to gain more muscle, lose weight and be fit.
MNB: Clearly health & wellness is important to you. When was it that you really started becoming passionate about Active Living? What was the ‘uh ha’ moment for you?
My ‘uh ha’ moment was when I was around 16 years old when I could clearly see myself years later working as a health and fitness professional and helping people get back in shape. From that age onwards I was determined and started a passionate journey learning everything about food nutrition, exercising and healing therapies.
MNB: What are you working on this year? Any major goals you would like to hit out of the ballpark?
At the moment I’m working on the launch of my new website, video series and events nationally and internationally. My biggest goal at the moment is to publish my second book and get heavily involved in television cooking shows to be able to reach and teach millions of people about nutrition and health habits. I’m so passionate and enthusiastic about teaching and sharing my knowledge, my cooking classes allow me to share the enjoyment of cooking with the community and getting hands-on can be really motivating for people.
MNB: What are some food misconceptions that really get under your skin?
I have seen numerous amounts of food misconceptions in my career and I can honestly say that some things that really get under my skin are:
- Artificial sweeteners are safe for you
- Tap water is safe for consumption without filtration
- Sugar is not the cause of obesity and disease
- Carbohydrates are not good for you
- Dairy is essential to health
- A plant based diet is not complete
- Every animal food product is safe for you
MNB: What recipe do you cook when you really wanna impress?
Well, it depends how I feel about the event and how much I know about my guests. I like to diversify the menu and sometimes I do a fusion of cuisines and flavours. I love to mix Brazilian, Italian, Mediterranean, Spanish, French, Thai, Japanese and Balinese traditional cuisine and play with the ingredients that I have available on hand. My favourite recipe to impress I think is: exotic salmon or traditional Brazilian BBQ with black beans and salsa – yum!
MNB: Okay, so if you had to choose…what would be your top 3 ‘can’t live without’ foods of all time?
- Seafood sushi
- Eggs – scramble and poached!
- Raw salad and vegetables with a lemon, olive oil and salt dressing
MNB: How do you MNB (move, nourish, believe) on a daily basis?
I love nutrition and exercise and it’s much easier to have that as a routine once you establish and feel the benefits of it! I generally move my body every day for 1 hour and I nourish it with fresh wholefoods afterwards. I believe that we are what we eat and what we absorb. Without good food to nourish our mind, body and spirit it’s hard to keep on top with peak performance. My mind set is always positive and I believe that everything is possible when you put your mind to it and make it happen.
MNB: Best advice you have ever been given??
MNB: I’m my happiest… When I’m on stage teaching and performing to hundreds of people doing what i do best, cooking!
MNB: The one thing I’m really trying hard to do right now is… To accomplish the BIG goals and targets that I set at the beginning of this year. I’m big on setting goals and intentions, it’s so rewarding to know you’ve been able to achieve what your heart desires and what your dreams are made of!
MNB: Bedside book at the moment… The Magdalena Version.
MNB: Right now I’m listening to… Ludovico Einaudi. His music is classical but so moving. If you haven’t listened to him before, you’ve just got to!
MNB: My ultimate workout is… Would have to be HIIT (High intensity interval training) – Spin bike, skipping, body weight exercises and boxing!
MNB: Who would you like to cook for… One of my favourite celebrity chefs and restauranteurs, Gordon Ramsay. He’d be a tough critic but I think I’d be up for the challenge! AND FINALLY…
MNB: Any Move, Nourish or Believe tips before we part?
- Move your body daily and do something that you get excited and happy by doing it
- Nourish not only your physical body but also you mind and soul. The 3 keys to keep you healthy and happy
- Believe in that nothing is impossible and everything has a way to get better, including you!
And I’d love to share my famous recipe Quinoa Super Salsa!
Lunch and dinners should contain lots of nutrients like protein, low GI carbohydrates and good fats to help control energy levels through the day. Quinoa is an excellent source of carbohydrates and fibre and also contains good amounts of amino acids, vitamins and minerals. Every seminar or presentation that I make I show my audience how to make quinoa salsa and everyone loves it! It’s an easy and delicious lunch or snack for the whole family.
Sporty Brother of the Week: Ronaldo Fulieri
Total Time: 30 minutes
Servings: Serves 6
- 150g uncooked white quinoa
- 150g uncooked black or red quinoa
- 600ml of water
- 400g tin of cooked kidney beans – drained and washed
- 1 cup of cherry tomatoes – cut in half
- 1 big red onion – diced small
- 1 green capsicum – diced
- 1 red capsicum – diced
- 100g of kalamata olives deseeded – chopped small
- 1 cup of fresh coriander – finely chopped
- 2 limes – juice squeezed
- 4 tablespoons of olive oil
- 2 teaspooons of salt
- 1 teaspoon of pepper
- 1 small long red chilli – chopped
- In a big saucepan bring the water to boil, add the quinoa, reduce heat and simmer for around 10–15 minutes, checking the water levels every couple of minutes before it evaporates and turn the heat off.
- Keep a lid on top and leave for 10 minutes to finish cooking the grain.
- Transfer the cooked Quinoa to a bowl and let cool down before finishing the recipe.
- Mix all the other ingredients in a bowl and mix well.
- Serve with salads, lean cuts of meat, chicken or fish.
